It is guaranteed by IANA that example.com is *not* assigned. But please don't ask where all that mail traffic goes to (/dev/null I suppose). In principle you could use 'nobody / nowhere.invalid' but that might run you into trouble because some people don't know that despite the name 'invalid' is a valid TLD. What about using an address like as_you_like_it / sofort-mail.de (sofort-mail.de provides throw-away addresses).
